These two recipes are our go-to recipes (Chicken Shawarma and Copycat Chipotle Chicken). Both recipes are super easy, delicious, healthy, and make quite a bit of leftovers for us to have salad bowls for lunches. Our kids, who tend to be picky eaters, absolutely love them both! My younger son would eat the homemade tzatziki by the spoonful if we let him. If you are looking for a store bought hummus to go with the chicken shawarma, you must try Good & Gather Roasted Garlic Hummus from Target (also great with bell peppers and Veggie Straws...yes Veggie Straws).
Here is how we make our homemade tzatziki recipe:
1.5 cups fat free Greek yogurt
Half a cucumber peeled, shredded, and water squeezed out
1/2 tsp garlic
2 tsp lemon juice
2 Tbsp olive oil
a pinch of salt
Put everything in a food processor and blend until smooth. Enjoy with the chicken shawarma or as a veggie dip!
Two of these recipes, the Shrimp Pad Thai and Navel Orange Salad w/ Avocado are new ones, but from SkinnyTaste. I don’t know if I have tried a recipe of hers that I didn’t like, and she has all of the WW points listed for each one, which is so nice! For the salad, we will grill up some Schwan’s chicken breast to serve with it. And since my kids likely won’t eat either meal, we will be making them the standard chicken nuggets, sweet potato fries, and bell peppers and some tomato soup and grilled cheese (if you have it available, try this bread-Angelic Bakehouse). The Buffalo Chickpea Salad is a recipe we have made several times, and it’s so easy, yummy, and low WW pts. We add some feta cheese for a little more tang. Enjoy!

I am 35 year-old full-time working wife and mama to two boys--Brody (8) and Bennett (4). I was born and raised in Canada (or America's hat as some people call it), and moved to the U.S. for college where I met my now husband. We currently live in Minnesota, so basically still Canada, and we just built a home last summer. 2020 has been so hard for so many people, and while I am fortunate to be in the situation I am in, it has really made me reflect about what I want in life and how I can continue to bring joy into it. I have realized what brings me the most joy is seeing the people that I care about happy, and also connecting with people on a personal level. Fast forward to here, I want to create a community that I can connect with by sharing products and ideas I love from home to fashion to wellness, but also opening up about moments in my life that have helped me grow, even if they aren't my happiest ones. My hope is that you too can find things here that bring more joy into your life.
